- 1 ripe avocado (diced)
- 1 cup chickpeas (cooked or canned, rinsed)
- ½ cucumber (chopped)
- Cherry tomatoes
- Fresh lime juice
- Olive oil
- ½ medium red onion, thinly sliced
- Pinch of sea salt & black peppe
Directions:
Whisk lemon juice, oil, salt and pepper in a large bowl. Add rinsed chickpeas, halved tomatoes, sliced onion and diced avocado; toss gently to coat.
