April Healthy Recipe: Avocado & Chickpea Salad

Ingredients:

  • 1 ripe avocado (diced)
  • 1 cup chickpeas (cooked or canned, rinsed)
  • ½ cucumber (chopped)
  • Cherry tomatoes
  • Fresh lime juice
  • Olive oil
  • ½ medium red onion, thinly sliced
  • Pinch of sea salt & black peppe

Directions:
Whisk lemon juice, oil, salt and pepper in a large bowl. Add rinsed chickpeas, halved tomatoes, sliced onion and diced avocado; toss gently to coat.
